Winemaking Technique:

  • 3-4 days of skin maceration
  • Spontaneous fermentation without the addition of enological yeasts

Notes:

  • Separate alcoholic fermentations for the harvest of grapes at different times
  • Short maceration for Nero d'Avola, similar to rosé wine
  • Blended in tank for harmonization
